Failed to comply with s21(1) of the Food Act 2003:

  1. Food Standards Code 3.2.2 6(1)(a) - Defendant failed to store food in such a way that it was protected from the likelihood of contamination;
  2. Food Standards Code 3.2.2 6 (2) (a) - Defendant failed to store potentially hazardous food under temperature control ;
  3. Food Standards Code 3.2.2 15 (4) - Defendant failed to:
    1. Use the hand washing facilities provided;
    2. Thoroughly clean his hands using soap or other effective means, and warm running water; and
    3. Thoroughly dry his hands on a single use towel or in another way that is not likely to transfer pathogenic micro organisms to the hands;
  4. Food Standards Code 3.2.2 19 (1) (c) - Defendant failed to maintain food premises to a standard of cleanliness where there is no accumulation of food waste;
  5. Food Standards Code 3.2.2 19 (2) (a)(b)(c) - Defendant failed to maintain all fixtures, fittings and equipment, having regard to its use, to a standard of cleanliness where there is no accumulation of food waste, dirt and grease –;
  6. Food Standard Code 3.2.2 22 (a) - Defendant failed, at food premises where potentially hazardous food is handled, to have a temperature measuring device that is readily accessible;
  7. Food Standards Code 3.2.3 15 (1) - Defendant failed to have adequate storage facilities for the storage of items that are likely to be the source of contamination of food, including chemicals, clothing and personal belongings
